Analisis Kandungan Nutrisi Pada Beras Galur Mutan M5 Padi (Oryza sativa L.) Lokal Sigupai Aceh Barat Daya

Kebutuhan akan pangan yang aman dan sehat menjadi prioritas utama masyarakat, termasuk beras sebagai sumber karbohidrat utama. Varietas lokal padi Sigupai ABDYA memiliki keunggulan seperti aroma khas dan rasa enak, namun memiliki kelemahan seperti hasil panen rendah dan umur tanaman panjang. Upaya perbaikan varietas ini dilakukan melalui mutasi dengan iradiasi sinar gamma untuk meningkatkan potensi hasil dan kualitas tanaman. Penelitian ini bertujuan untuk menganalisis kandungan protein, lemak, dan pati pada beras mutan M5 hasil iradiasi varietas Sigupai. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) non faktorial yang terdiri dari 5 perlakuan, masing-masing perlakuan dengan 3 ulangan, sehingga secara keseluruhan terdapat 15 unit satuan percobaan. Adapun yang menjadi faktor dalam penelitian ini adalah M1=Varietas Mustajab, M2= UM-14: M3= UM-69: M4= UM-8: M5= UM-89. Data yang diperoleh kemudian dianalisis menggunakan ANOVA. Hasil penelitian menunjukkan bahwa terdapat variasi kandungan nutrisi (protein, lemak, dan pati) pada galur mutan generasi kelima (M5) padi lokal Sigupai Aceh Barat Daya (ABDYA). Berdasarkan hasil uji ANOVA, pengaruh perlakuan galur memiliki pengaruh yang signifikan hanya terhadap kadar protein saja. Temuan ini memberikan informasi penting mengenai potensi galur mutan M5 untuk pengembangan varietas unggul padi dengan kandungan nutrisi yang lebih optimal, khususnya pada kadar protein, guna mendukung pemenuhan kebutuhan pangan bergizi.
